On Jan 14th I finally got up the nerve to try the cheesecake recipe on page 416 of Miss Vickie's Big Book of Pressure Cooker Recipes. I was skeptical,
(although I had no real reason to be). But when I removed the finished product from the pressure cooker, I was amazed! Imagine..perfectly beautiful
cheesecake without running the oven for an hour and a half. I had guests yesterday and they were astounded also.
Today I tried a variation on the lemon cheesecake. I used gingerbread pecan biscotti for the crust, eliminating extra sugar, and used orange zest and the
juice of half an orange in place of the lemon. This beautiful cheesecake will go to my daughter's tomorrow for her family to enjoy.
While I have no intention of making another cheesecake every two days, my mind is flooding with ideas for other variations on the original recipe.
