Will the recipes that we have been downloading and that you have been giving us, be in the new book. I'm very excited, and I really think its the most comprehensive book on pressure cookery ever printed. Its not only a great reference, but the recipes are pretty good too... even if I do say so myself. I've included some of the most popular recipes from the website, things like pot roasts, navy bean soup or stew, the ones I think of as 'staples', and could simply could not leave them out of cookbook. However, in most cases, I've tried to use a different version in the cookbook to avoid duplicating the ones on the website. Happily, the majority of recipes are either totally new and created especially for the cookbook, or they from my archives and have never been on the website. Only problem I see, is that I don't know which one that I want to cook first! LOL! I spoke with Ray of the Yahoo pressure cooker group and told him about the book. Don't anyone be afraid to buy it! Now that I have it, I dont want to let it go. This is not just a cookbook. It's a valuable resource. The wonderful recipes put it over the top for a "must have". Registered User Posts: 4 05/16/08 14:41:23	I am new to Pressure Cooking--> I stumbled upon this website by happy accident!! I have been using the workshop lessons and the tips for a week or so. The advice I have found here has not failed me yet; so when saw your cookbook was available I went straight to Amazon and bought it!!! It came today-Damaged- the cover was torn during shipping so they are sending me a new one straight out and as an inconvenience courtesy they are letting me keep the damaged copy--> so I will have one to use in the kitchen and one to study in my room or take with me on vacation. We usually rent vacation houses, saves money on hotels and food because we can cook our own food. I plan on taking my new pressure cooker with me this year! I am in the process of planning out our vacation menu now so the arrival of your cookbook couldn't have come at a better time. I have a suggestion: I think the binding should be spiral. that way when you open it, it will lay flat or for limited counterspace you can flip the pages around back and only have half the book taking up space. So that leads me to my next question: where can I find the pan and steamer basket insert set from Kuhn-Rikon?? I ordered it from Pleasant Hill Grains but it was backordered; today I got a call from their customer service dept to say that they were just informed by Kuhn-Rikon that that item has been discontinued.... I am totally bummed. Thank You

In the fews times over the many years that I've been shopping there, they responded quickly, and without any hassels, to fix the problem to my satisfaction. Now that you have it, I hope you'll find lots of recipes to try. I have heard from some other readers who were happy with the spiral type binding. Others get the holes punched so it will go in a 3-ring binder. We pressure cooker afficianados sure are a resourceful and inventive bunch! Added: I'm checking on the availability of additional accessory items, so check back in with my Amazon link, Miss Vickie's Store, in a few days to see what's been added. Registered User Posts: 246 06/17/08 10:19:05 Moderator	Miss Vickie, I am in the sunny southwest, where the temperature at 10:30am today was already hitting 85degrees. I needed to use up some fresh peaches. Normally, I would bake a pie, but not in this heat! I decided to try the "Caramel Apple Pudding" in your wonderful cookbook, substituting the peaches (one of your suggestions). Except for egg custard and flan, though, I have not attempted dessert in the pressure cooker, and I was a little skeptical, afraid it might turn out to be a soggy mess. I cannot describe how wonderfully beautiful this cake came out! (of course, you knew that already). My husband took one look and exclaimed "I can't believe you are baking in this heat!". He was floored when I told him I just took it out of the pressure cooker, and that the heat it generated into the room was next to nothing. I cannot wait to show my daughter how to make this for her family. I bought her a pressure cooker, and your book, but she has not fully embraced pressure cooking. I am bringing her along slowly. This might just seal the deal!. Dear Readers: Miss Vickie's book is a "must have", not only for the recipes, but also for all the useful, educational information.

Registered User Posts: 1189 06/17/08 15:22:06 Owner	I sympathize with the heat; I'm in Southern Calif. Its even too hot to stand outside and BBQ, so I hope you'll try that too. The last time I made it, I used fresh apricots and a few thawed boysenberries, and it was wonderful eating. I haven't used peaches in ages, but now I wish I had some, but I'll have to have wait until my next trip to the store. I'd like to find the freestone variety, but its mostly the cling types that I find here. How many peaches did you use? I'm very happy that you liked the recipe, and I wish you had a photo to post, it must have looked very pretty.

Registered User Posts: 246 06/17/08 18:55:56 Moderator	I used 3 good sized peaches, i'd guess about 3" diameter. I didn't think to take a picture, it's too late now. This is something we will definately have again. My brother lives with us. He suggested sprinkling the pan with some toasted pecans next time, for some crunch, before spreading the batter. Next time I make it, I'll try to get a photo before it's been devoured. I covered the pan with foil and tied cotton kitchen cord around it to keep the foil from coming uncrimped. When I use cord in this way, I always wet it first, so it will be stretched to the max already & wont become loose during the steaming process. This also helps to make a tight bow in the string.

Registered User Posts: 1189 06/18/08 09:36:38 Owner	I just got back from shopping -- with some nice peaches -- to make a Caramel Peach Pudding this weekend. Yummy! Here's a tip: instead if using string -- which is never handy when I need it -- try a rubber band to secure the foil in place. I use two of the thin ones, or one of the wider ones -- very easy -- and I always have a bunch in the 'junk' drawer.
